Ingredients for 2 servings:

  • 250 g tortellini, fresh
  • 1 cup of cream
  • 2 slice(s) of ham (prosciutto cotto)
  • 1 tsp butter
  • e.g. Parmesan, fresh
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cut the ham into strips or cubes and sauté in butter. Add the cream, season lightly, and simmer until the sauce becomes slightly creamy. Cook the tortellini according to the instructions, drain, and add. Remove from the heat and stir in the grated Parmesan cheese. Stop cooking and season again. If the sauce is a bit too thick, thin it with the pasta water. Be careful with the salt, as the ham adds salt. You can use pancetta instead of ham, but then omit the butter. Another tip: always use cream, not milk. Milk tends to curdle when cooked down. Thickening the sauce then defeats the purpose, and who wants to count calories anyway?
