Tortellini broccoli gratin à la Carbonara

Ingredients for 4 servings:

  • 800 g broccoli
  • 500 g tortellini with ricotta filling, from the refrigerated section
  • Salt
  • 1 onion(s)
  • 2 garlic cloves
  • 50 g bacon (rib bacon), diced
  • 50 g butter
  • 200 ml cream
  • 100 ml meat broth, strong
  • pepper
  • Nutmeg, freshly grated
  • 3 egg yolks
  • 100 g hard cheese, freshly grated

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

quick, easy and spicy

Clean the broccoli and divide it into small florets. Peel the broccoli stalks, if necessary, and cut them into pieces. Pre-cook the broccoli and tortellini in boiling salted water for about 5 minutes. Drain everything in a colander, rinse with cold water, and let drain. Place the vegetables and pasta in a greased baking dish. Preheat the oven to 200°C (180°C fan-assisted). Dice the onion and garlic and sauté them in melted butter along with the bacon. Add the cream and stock and let it reduce slightly. Season the sauce with salt, pepper, and nutmeg, then stir in the egg yolks and half of the cheese. Pour the sauce over the broccoli and tortellini. Sprinkle with the remaining cheese and place the gratin on the middle rack of the oven. Bake for 30 minutes until golden brown.
