Ingredients for 4 servings:
- 400 g tortellini,
- 3 cloves garlic, finely chopped
- 8 apricots, dried, coarsely chopped
- 3 tbsp tomatoes, dried in oil, roughly chopped
- 200 g ham (Serrano), cut into cubes
- 200 ml red wine
- 200 ml cream
- e.g. salt and pepper
- e.g. chili powder
- 1 shallot(s), finely chopped
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Add 3-4 tablespoons of oil from the jar of sun-dried tomatoes to a pan. Sauté the garlic, shallot, apricots, tomatoes, and ham for about 5 minutes. Then add a generous splash of red wine and let it reduce. Repeat this process two more times. Then add the cream and the remaining red wine and simmer briefly until the sauce reaches the right consistency. Season the sauce with salt, pepper, and chili. Cook the tortellini according to the package instructions and then stir into the sauce.
