Tortellini salad with curry

Ingredients for 12 servings:

  • 3 packs of tortellini with cheese (from the refrigerator)
  • 1 cucumber(s)
  • 1 pack of cocktail tomatoes
  • 1 gr. jar salad cream (Miracle Whip Balance)
  • tbsp curry
  • n. B. herb salt and pepper
  • n. B. Italian herbs, e.g. basil
  • 1 tbsp oil

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring the tortellini to a boil briefly in a saucepan, then drain and let cool slightly. Meanwhile, slice the cucumber lengthwise and scrape out the flesh with a small spoon, as otherwise the salad will be too watery. Then cut the cucumber into small cubes and place in a bowl. Halve the cocktail tomatoes and add them. Add the oil and season with herb salt, pepper, and herbs. Add the Miracle Whip Balance and mix. Then add the curry. Mix thoroughly. Finally, add the tortellini and mix everything together. This salad is always a favorite at barbecues and is quick to make. Tip: If you like, you can add a small splash of juice. This gives the salad a fruity and refreshing note.
