Tortellini salad with zucchini and mozzarella

Ingredients for 4 servings:

  • 250 g tortellini
  • salt and pepper
  • 400g mozzarella
  • 1 onion(s)
  • 2 small zucchini
  • 1 bunch of basil
  • 1 tsp mustard (medium hot)
  • 1 tbsp tomato paste
  • 3 tbsp vinegar (red wine vinegar)
  • 5 tbsp olive oil

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Cook the tortellini in plenty of salted water. Dice the mozzarella. Finely chop the onion and dice the zucchini. Remove the basil stems, wash, and dry. Place the pasta, mozzarella, onion, zucchini, and basil (reserve a few leaves for garnish) in a bowl. Mix a marinade of mustard, tomato paste, red wine vinegar, olive oil, salt, and pepper and pour over the salad. Let the salad stand for 15 minutes and sprinkle with the remaining basil leaves.
