Vegetarian Tortellini Salad

The perfect vegetarian tortellini salad recipe with a picture and simple step-by-step instructions.

Salad dressing:

  • 1 small Zucchini
  • 4 small Finger cucumbers or a large piece
  • 1 small Red, Turkish aromatic peppers or a piece of normal
  • 1 small can Corn with peas and peppers
  • 3 tbsp Ketchup from my KB
  • 1 good shot Vinegar
  • 1 good shot Water
  • 1 good shot Seasoned Salt
  • Vegetable broth
  • Garlic pepper from my KB
  • Freshly grated nutmeg
  • Salt and pepper from the mill
  • 1 good shot Worchester sauce
  • 1 tbsp Mustard
  • 1 Splash Lemon juice
  • 2 tbsp Extra virgin olive oil
  1. Cook the tortellini according to the instructions on the packet, quench and cool.
  2. Second, wash, clean and chop the zucchini, cucumber and bell peppers. Can of corn … drain.

Salad dressing:

  1. Put all the ingredients for the salad dressing in a shaker, except for the oil. Shake well and finally add the oil!
  2. Add the salad sauce to the tortellinis that are still lukewarm. They will soak up the salad sauce a little bit warm! 😉 Add the vegetables and mix everything well!
  3. Approx. Let it steep for 1 hour! Goes well with grilled food!

ANNOTATION:

  1. I have Turkish aromatic peppers in the garden and it looks like chilli! 🙂 It’s mild, fruity and very slightly spicy!
