Tortellini – tuna – pan

Ingredients for 4 servings:

  • 500 g tortellini, pre-cooked
  • 500 g tomatoes, pureed
  • 50 g ham
  • 1 onion(s)
  • 2 carrots
  • 3 tbsp lemon juice
  • 1 ½ tbsp mustard
  • Parsley
  • 1 can of corn
  • 1 can peas
  • 1 can of tuna
  • 150 ml vegetable broth, strong
  • 100 ml cream
  • 2 tbsp tomato paste
  • salt and pepper
  • Parmesan

Working time approx. 25 minutes; Total time approx. 25 minutes

Also suitable as a gratin

Combine the vegetable stock with the cream, tomato paste, spices, and passata in a saucepan and bring to a boil while stirring. Meanwhile, finely chop the ham and onions and sauté in a little olive oil. Peel and finely grate the carrots and add them to the pan. Deglaze with lemon juice. Add the mustard, parsley, and tomato stock (season to taste if desired). Finally, stir in the pre-cooked tortellini, corn, peas, and tuna. Simmer uncovered until the desired consistency is reached (about 10 minutes). Serve on plates and sprinkle with Parmesan cheese, if desired. Variation: This recipe can also be made into a wonderful gratin dish. Simply combine all the ingredients in a gratin dish immediately after mixing and sprinkle with grated cheese. Bake in a preheated oven at 200°C (400°F) until the cheese is golden brown (about 15-20 minutes).
