Tortellini with Fruity Tomato Sauce
The perfect tortellini with fruity tomato sauce recipe with a picture and simple step-by-step instructions.
- 500 g Fresh tortellini
- 2 piece Shallots
- 2 piece Garlic cloves
- 1 cups Brunch paprika hot peppers
- 400 g Peeled tomatoes in pieces
- 4 piece Cocktail tomatoes
- Freshly chopped thyme
- Salt and pepper
- 1 pinch Sugar
- 100 Ml Vegetable or veal stock
- 1 tbsp Olive oil
- Peel shallots and garlic and chop very finely.
- Cook the tortellini al dente according to the instructions on the packet.
- Briefly sauté shallots and garlic in olive oil and deglaze with the stock. Add the rosemary and chunky, peeled tomatoes and simmer on a low heat for about 10 minutes.
- Season to taste with salt, pepper and sugar. Stir in the brunch paprika & peppers and heat again briefly. Carefully fold in the cooked tortellini and halved cocktail tomatoes, season to taste again and serve on preheated plates, garnished with fresh basil.
