Tortellini with Fruity Tomato Sauce

The perfect tortellini with fruity tomato sauce recipe with a picture and simple step-by-step instructions.

  • 500 g Fresh tortellini
  • 2 piece Shallots
  • 2 piece Garlic cloves
  • 1 cups Brunch paprika hot peppers
  • 400 g Peeled tomatoes in pieces
  • 4 piece Cocktail tomatoes
  • Freshly chopped thyme
  • Salt and pepper
  • 1 pinch Sugar
  • 100 Ml Vegetable or veal stock
  • 1 tbsp Olive oil
  1. Peel shallots and garlic and chop very finely.
  2. Cook the tortellini al dente according to the instructions on the packet.
  3. Briefly sauté shallots and garlic in olive oil and deglaze with the stock. Add the rosemary and chunky, peeled tomatoes and simmer on a low heat for about 10 minutes.
  4. Season to taste with salt, pepper and sugar. Stir in the brunch paprika & peppers and heat again briefly. Carefully fold in the cooked tortellini and halved cocktail tomatoes, season to taste again and serve on preheated plates, garnished with fresh basil.
