Tortellini with turkey fillet and orange

Ingredients for 4 servings:

  • 400 g turkey meat
  • 3 tbsp oil
  • Paprika powder, soy sauce
  • 2 cloves garlic
  • 250 ml white wine
  • 150 ml orange juice
  • 1 cube of chicken breast
  • 2 cups of crème fraîche, 150g each
  • ½ tbsp sugar
  • 25 g sunflower seeds
  • 200g tortellini
  • 1 bunch of cress
  • salt and pepper

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Cook the tortellini according to the package instructions. Dice the turkey fillet, season with pepper, salt, and paprika, and sear in olive oil. Remove the meat and deglaze the pan with wine and orange juice. Add the stock cube and crushed garlic and simmer for 5 minutes. Now add the crème fraîche and sugar and simmer for another 10 minutes until the sauce becomes creamy (season with soy sauce if desired). Fillet the oranges (this works best if you peel the orange zest, including the white pith, with a sharp knife and then cut out the fillets like wedges). Roast the sunflower seeds in a pan without fat. Now stir the turkey cubes, tortellini, and orange fillets into the sauce and sprinkle with sunflower seeds and cress.
