Ingredients for 12 servings:
- 3 sausages, Vienna sausages
- 1 bell pepper(s), red
- 1 garlic clove(s)
- 1 can of corn
- 1 can kidney beans, red
- 1 tsp sweet paprika powder
- 1 tsp curry
- 1 pinch of cayenne pepper
- 3 eggs
- 150 g cream
- salt and pepper
- 1 pack of tortillas (6 pieces)
- some olive oil
- 100 g grated cheese (Gouda, Emmental)
Instructions

Cut out approximately 10cm circles from the tortillas. Cut the sausages into small slices, peel and finely dice the garlic, and wash and finely dice the bell peppers. Pour the corn and beans into a sieve and rinse. Add the diced bell peppers and let them drain. Beat the eggs with the cream and stir in the spices. Heat olive oil in a pan and sauté the garlic. Add the vegetable mixture and diced sausages, stir briefly, season with salt and pepper, and set aside. Place baking cups in the holes of a muffin tin and press the tortilla into them. Loosely fill with the mixture, just below the rim. Carefully pour in the seasoned egg wash. Finally, sprinkle with grated cheese and bake for about 20-25 minutes at 175°C (350°F), until the cheese is browned. A simple dish that’s quick to prepare. Ideal as an appetizer or for a party buffet. It also tastes good cold. There are endless variations for the filling, depending on your taste.
