Ingredients for 8 servings:
- 8 tortilla(s) (wheat)
- 1 can of tomatoes, chopped
- 100 g shallot(s)
- 50 g carrot(s)
- 50 g celery
- 50 g leek
- 1 garlic clove(s)
- Pizza seasoning
- Salt
- 1 cup mozzarella, mini balls
- 200 g cheese (Gouda), grated
- 150 g Parma ham
- 150 g arugula
- oil
Instructions
Working time approx. 25 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes
Finely dice the garlic clove, shallots, carrots, celery, and leek. Heat the oil in a pan, sauté the chopped vegetables, and add the tomatoes. Simmer gently for one hour, then season with the pizza seasoning and a pinch of salt. If you like, purée the sauce. Spread the sauce on the tortillas. Slice the mozzarella balls and arrange them on the tortillas with the grated Gouda. It’s best to prepare the tortillas on a baking sheet and then place them in an oven preheated to 200°C for 5 minutes. Remove from the pan, arrange the ham and arugula on top, and serve.
