Ingredients for 1 servings:

  • 200 g ladyfingers
  • 100 g biscuits (amarettini)
  • 150 g butter
  • 2 cans peach(s) (halves, 820 g)
  • 9 bags of gelatin fix
  • 400 ml cream
  • 2 packs of cream stiffener
  • 500 g low-fat curd cheese
  • 400 g low-fat yogurt
  • 300 ml peach juice from the can
  • 3 packets of vanilla sugar
  • 100 g sugar

Grind the ladyfingers and amaretti biscuits very finely in a stand mixer. Alternatively, you can place them in portions in a freezer bag and crush them with a rolling pin. Melt the butter and mix with the breadcrumbs. If necessary, add 1-2 tablespoons of butter and spread it on a cake plate in a tall, large-diameter cake ring (set to the maximum size), pressing it down firmly. Place a cut-open freezer bag or cling film underneath (otherwise the base will stick to the plate) and refrigerate for about 30 minutes. Purée 1 can of peach halves with a generous splash of peach juice from the can and mix with 3 sachets of gelatin for 1 minute. The total purée should be about 750 ml. Do not discard the remaining juice. Drain another can of peach halves and collect the juice. Whip the cream with the cream stabilizer until stiff peaks form and set aside. Mix the low-fat quark, low-fat yogurt, and peach juice with the vanilla sugar. Fold in the cream and whisk well with 6 more sachets of gelatin. Fold in the cream. Add sugar to taste and mix well. On the now firm base, carefully remove the cling film. Spread some peach puree on top, then add a little cream (approx. 1 cm total height). Then spread the drained peaches on top and press down. Pour the remaining cream over the top, carefully spoon the fruit puree over it, and use a fork to create a marbled pattern. Place in the refrigerator and let it set for at least 2-3 hours. The cake will be a visual monster. Approx. 30 cm in diameter, 7 cm high. Still light and easy to digest. During the Christmas season, the sponge fingers and amaretti biscuits can be replaced with speculaas, and instead of the peaches, you can use, for example, sour cherries from a jar with a generous dash of amaretto or bitter almond flavoring.
