Triple avocado mousse

Ingredients for 4 servings:

  • 2 large avocados, African, well ripened, alternatively 4 medium-sized
  • 3 banana(s), ripe
  • 2 tbsp coconut oil
  • 3 tbsp apple, finely chopped
  • some cinnamon
  • 3 tbsp cocoa powder, unsweetened
  • 1 tbsp honey
  • 1 handful of peanuts, roasted, unsalted
  • n. B. whipped cream or vanilla yogurt or chopped nuts for garnishing

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Ingenious African dessert

Peel the avocados and bananas and blend them finely with 2 tablespoons of coconut oil (if you don’t have any, substitute 2 tablespoons of desiccated coconut and 1 tablespoon of vegetable oil). Divide into three equal portions. Mix the first third with finely chopped apple pieces and a sprinkle of cinnamon, if desired. Blend the second third again with 3 tablespoons of unsweetened cocoa powder and 1 tablespoon of honey. Blend the final third again with a handful of roasted peanuts. Layer the mixture into glasses. Chill for 2 hours. Garnish with whipped cream, vanilla yogurt, or chopped nuts, if desired.
