Tuna and lentil salad

Ingredients for 4 servings:

  • 2 tomatoes
  • 1 small onion(s)
  • 400 g lentils from the can
  • 200 g tuna from the can
  • 2 tbsp coriander greens, chopped
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp mustard, grainy
  • 1 clove(s) garlic
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Deseed and finely dice the tomatoes. Finely chop the onion. Drain the lentils. Fluff the tuna with a fork. Combine these ingredients with the cilantro in a large bowl and mix well. For the dressing, combine all ingredients, adding a little more water if necessary. Then add the dressing to the salad and toss to combine. The salad can also be refined with sun-dried tomatoes, arugula, or olives.
