Ingredients for 4 servings:
- 125 ml oil
- 60 ml lime juice
- 2 tbsp fish sauce, Nam Plaa
- ¼ tsp black pepper, freshly ground
- some sugar
- 400 g tuna, sushi quality
- 3 tbsp coriander greens, roughly chopped

Cut the tuna into very thin slices, freezing them slightly beforehand if necessary. Prepare the dressing and pour half onto a platter. Arrange the tuna slices next to each other on top and cover with the remaining dressing. Marinate in the refrigerator for at least 30 minutes. Sprinkle with cilantro before serving.
