Tuna Tartare with Lime and Sage

- 500 g Tuna sushi quality
- 2 Pc. Lime juice
- 1 Pc. Lime zest
- 15 Pc. Sage leaves
- 170 g Creme fraiche Cheese
- 120 ml Cream
- 3 tsp Honey
- For the crème fraîche sauce, stir until smooth and gradually add the cream until the sauce takes on the desired consistency. Then add the juice of 1 lime, the grated zest of 1 lime and honey and season with salt, pepper and possibly additional honey.
- For the tartare finely chop the sage, cut the tuna into small pieces and mix with the sage and the juice of 1 lime. Season with salt and pepper and serve immediately, as the lime juice will attack the color of the tuna within a very short time.
