Turkey Apple Curry

Ingredients for 4 servings:

  • 600 g turkey breast fillet(s)
  • 500 g sour apples
  • 300 ml instant chicken broth
  • 250 ml coconut milk
  • 250 g yogurt
  • 200 g rice (jasmine rice)
  • 1 bunch of spring onions
  • 1 red chili pepper(s)
  • 1 garlic clove(s)
  • 4 tbsp oil
  • 2 tsp, heaped curry powder
  • 2 tsp cornstarch
  • Mint, fresh or dried
  • Chili pepper(s), finely chopped, for garnishing

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the turkey meat, pat dry, and cut into large pieces. Trim, wash, dry, and diagonally slice the onions. Trim, deseed, and finely slice the chili pepper. Peel and finely chop the garlic. Wash, peel, core, quarter, and roughly chop the apples. Wash the rice, add it to boiling salted water, simmer for about 5 minutes, and cover. Heat the oil in a pan and brown the meat vigorously. Add the apples, onions, and garlic, sprinkle with curry, and briefly fry everything. Deglaze with the stock and coconut milk, bring to a boil, and simmer for about 3-4 minutes. Mix the cornstarch with 3 tablespoons of cold water, add to the curry, and bring back to a boil. Remove the finished curry from the heat, stir in the yogurt, and season with salt. Serve on plates with rice and garnish with mint leaves and chili rings. Serve immediately.
