Turkey mango curry, low-fat

Ingredients for 2 servings:

  • 2 turkey schnitzels
  • 1 onion(s)
  • 1 bell pepper(s)
  • 1 mango(s)
  • 1 tbsp mango chutney
  • 1 tbsp soy sauce
  • 1 tbsp curry paste
  • 1 tsp olive oil
  • 2 cups of natural yogurt
  • 30 ml coconut milk
  • 2 cloves garlic
  • 1 tbsp curry powder
  • pepper
  • Paprika powder
  • some ginger, fresh

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 25 minutes

Cut the turkey cutlets into small pieces and marinate with the soy sauce and mango chutney (about 1 hour in the refrigerator, longer if desired). Chop the bell pepper, onion, and mango. Brown the meat, onion, and bell pepper in a pan with olive oil. Then add the mango pieces. Add the curry paste, yogurt, coconut milk, and garlic. Season with curry, pepper, paprika, and fresh ginger and simmer gently for about 10 minutes. I served it with rice.
