Turkey roulades

Ingredients for 4 servings:

  • 4 large turkey cutlets
  • 100 g sheep’s cheese
  • 1 egg yolk
  • 2 tbsp herbs, chopped
  • 1 garlic clove(s), chopped
  • 250 ml broth
  • 2 tbsp crème fraîche
  • 1 tsp flour
  • pepper
  • Clarified butter for frying

Working time approx. 30 minutes; Total time approx. 30 minutes

Lightly pound the turkey schnitzels. Crumble the feta cheese and mix with the egg yolk, herbs, and chopped garlic clove. Season with pepper. Spread this mixture on the schnitzels, roll them up, and secure with roulade pins. Brown the roulades on all sides in hot clarified butter. Then add the broth and let them simmer for about 20 minutes. Remove the roulades and keep them warm. Mix the crème fraîche with the flour, add to the broth, and season to taste. Arrange on plates and serve.
