Turkey schnitzel in tomato sauce

Ingredients for 2 servings:

  • 1 small onion(s), chopped
  • 3 tbsp oil
  • 1 small can of tomatoes, peeled
  • 1 bay leaf
  • salt, pepper
  • 150g mozzarella
  • Chives or basil
  • ½ tsp thyme
  • 2 turkey schnitzels (150g each), thin
  • 1 tsp clarified butter

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

In a large pan, brown the turkey cutlets in clarified butter for about 2 minutes on each side and season with pepper. Remove the turkey cutlets from the pan. Roughly wipe the pan with kitchen paper. Heat the oil in the pan and sauté the chopped onion until translucent. Add the tomatoes and their liquid. Add the bay leaf, salt, pepper, and thyme. Simmer uncovered. Place the turkey cutlets in the tomato sauce. Arrange the sliced ​​mozzarella on top. Cover the pan and melt the cheese over low heat for about five minutes, or bake in a preheated oven. Garnish with chives or basil leaves. Serve with baguette, ciabatta, toast, or rice.
