Turkey schnitzel – potato gratin

Ingredients for 4 servings:

  • 500 g turkey schnitzel, thin
  • 2 tbsp pesto or wild garlic paste
  • 2 tomatoes, cut into very thin slices
  • 8 medium-sized jacket potatoes, sliced
  • 1 pack of mozzarella, sliced
  • salt and pepper
  • Butter, in flakes

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Halve or quarter the turkey cutlets, depending on their size, and place them flat in a baking dish. Spread with the wild garlic paste or pesto. Arrange the tomatoes on top of the meat. Sprinkle with salt, then arrange the potatoes in a fan shape, then season with salt and pepper. Add a few knobs of butter and the mozzarella cheese. Bake at 200°C (400°F) for about 30 minutes. Cover with aluminum foil if desired; the cheese should melt rather than brown. Serve with a mixed salad.
