Turkey schnitzel with cashew crust

Ingredients for 4 servings:

  • 4 turkey schnitzels, approx. 125 g each
  • 100 g cashew nuts, chopped
  • 2 stalks thyme, chopped
  • 1 slice(s) of toast
  • 200 g double cream cheese
  • ½ lemon(s), untreated, peel
  • salt and pepper
  • Oil, for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Roast the chopped cashews in a pan without fat. Remove and let cool. Finely crumble the toast. Mix the cream cheese with the cashews, thyme, breadcrumbs, and lemon zest. Season with salt and pepper. Wash the meat and pat dry. Briefly fry on both sides in hot oil. Place the schnitzels in a shallow baking dish and season with salt and pepper. Spread the cashew mixture over the schnitzels. Bake in a preheated oven at 200°C for 10-15 minutes. I serve the schnitzels with mashed potatoes and carrots. If you like, you can also make a small sauce from the schnitzel drippings.
