Ingredients for 4 servings:

  • 400 g turkey breast
  • 2 tbsp soy sauce
  • 2 bunch spring onions
  • 5 apricots
  • 3 tbsp oil
  • salt and pepper
  • 100 ml whipped cream
  • 1 tsp curry powder
  • 80 g cheese (Gouda), grated
  • 1 white bread stick(s)
  • Thyme

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the turkey breast into thin strips and marinate with soy sauce. Preheat oven to 225°C. Trim and slice the spring onions. Quarter the apricots. Heat oil in a large pan and brown the meat, frying a few onions at a time. Finally, sauté the apricots and add them to the meat. Season with a little salt, pepper, and thyme, then pour into a shallow baking dish. Whip the cream until semi-stiff, mix with the curry, and spread over the strips. Sprinkle with Gouda cheese and bake for 10-15 minutes. Serve with white bread.
