Turkey thigh roast

Ingredients for 3 servings:

  • 1 turkey thigh(s), approx. 1.1 kg, with skin
  • 2 apples
  • 1 carrot(s)
  • 2 cloves garlic
  • 2 small onions
  • 1 allspice berry
  • 1 clove(s)
  • 1 small bottle(s) of beer, dark, malty
  • 2 tbsp olive oil
  • salt and pepper
  • 1 stalk(s) celery
  • ½ parsley
  • 2 bay leaves
  • possibly cream
  • 1 tbsp orange jam, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 45 minutes

Heat the olive oil in a large cast-iron roasting pan and then sear the roast skin-side down first. Sear the roast well on all sides. Quarter and core the apples and add them to the roast. Add the carrot, garlic, parsley root, celery and the spices and deglaze with the beer. Cover and roast at 200 degrees Celsius for 90 minutes. Remove the roast from the pan, remove the bay leaves and then mix everything with a hand blender. If you prefer it creamier, add cream; otherwise, add a tablespoon of orange marmalade and return the roast to the sauce. We had red cabbage with apples, potatoes and dumplings.
