Turnip greens with a twist

Ingredients for 2 servings:

  • 1 bunch turnip greens
  • 1 onion(s), red or 2 small shallots
  • 2 small sweet potatoes or 1 large
  • salt and pepper
  • some oil
  • 2 tbsp pesto, red or seasoned tomato paste

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Wash the turnip greens and cut into 2 cm pieces, leaving the bottom 5 cm of the stem. Finely dice the onions and sauté in a little oil. Peel and dice the sweet potatoes. Add the turnip greens to the onions and sauté over low heat for 10 minutes. Add the sweet potatoes, season with salt and pepper, and add the pesto. Once the sweet potatoes are cooked, mix everything together and season again. Serve with crispy duck or meatballs!
