Tyrolean bacon dumplings

Ingredients for 4 servings:

  • 100 g bacon, fat, cut into small cubes
  • 200 g smoked meat, preferably off the bone
  • 6 bread rolls, diced
  • 250 ml milk
  • 2 eggs
  • Salt
  • 30 g butter
  • 1 small onion(s), finely chopped
  • 1 bunch parsley, finely chopped
  • 60 g flour, non-stick

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 10 minutes

Fry the bacon and toast the bread cubes in it. Whisk the milk and eggs together, add salt, and pour over the bread cubes. Roast the onion in butter and finely chop the smoked meat. Mix both ingredients with the parsley into the bread mixture and let it sit for 1/2 hour. Sprinkle the flour over the dumpling mixture, mix in, form dumplings with wet hands, and cook in soup or salted water for 12 minutes.
