Ingredients for 1 servings:
- 500 g quark, preferably light
- 400 g crème fraîche
- 200 g sour cream
- 150 g natural yogurt, organic
- 1 large cucumber(s)
- 4 garlic cloves
- 50 g dill
- 2 dashes lemon juice
- lots of salt and pepper
- some oregano, optional
Instructions
Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes
Peel and grate the cucumber. Immediately squeeze out the liquid and season the grated cucumber generously with salt. Let it sit for at least 15 minutes. Meanwhile, combine the crushed garlic, quark, crème fraîche, sour cream, yogurt, and dill and stir well. Season to taste with pepper, lemon juice, and oregano, if desired. Once the salted cucumber has marinated thoroughly, stir it in and season with more salt if desired. The finished tzatziki tastes best when it sits for several hours, preferably a day or overnight.
