Ingredients for 2 servings:
- 1 cup rice
- 2 zucchini (UFO)
- 1 chili pepper(s)
- 1 stalk(s) leek
- 4 mushrooms
- 1 carrot(s)
- ½ red bell pepper(s)
- 1 onion(s)
- 1 bunch of parsley
- ml cream
- Spices)
- 100 g cheese, grated
- Water or vegetable broth
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the rice with the halved, deseeded chili pepper until al dente. Wash the zucchini, cut off the tops, and hollow out the insides. Cut the vegetables into small cubes and sauté briefly. Finely chop the parsley and add to the vegetables. Add the rice and mix well. Season with cream and spices, stuff the zucchini with the mixture, and sprinkle with cheese. Place the zucchini in a baking dish, add a little water or vegetable stock, and bake at 200°C for about 15-20 minutes.
