Ingredients for 4 servings:
- 600 g asparagus, fresh
- 2 bell peppers, red and green
- 3 eggs
- 150 g cheese, Emmental, grated
- ½ tsp salt
- ½ tsp pepper
- 1 pinch of paprika powder
- ½ tbsp butter
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Peel the asparagus and cook in plenty of salted water until almost tender, 10-15 minutes, depending on the thickness of the asparagus. Wash and trim the bell peppers, and cut into fine strips. Beat the eggs, stir in the grated cheese, salt, pepper, and paprika. Beat the egg mixture until thick and fluffy. Then add the bell pepper strips. Place the drained asparagus in a buttered ovenproof dish and pour the egg mixture over it. Place the dish in the preheated oven and bake for about 20 minutes at 220°C, until the egg and cheese mixture is stiff. Serve very hot in the dish with baguettes and a green salad.
