Urmeli's aromatic apple-plum-rum jam

Ingredients for 1 servings:

  • 300 g apples
  • 400 g plums
  • 4 tbsp rum
  • 4 tbsp apple juice
  • 2 tbsp water
  • 2 tsp lemon juice
  • 1 pinch of allspice
  • 1 tsp. clove powder
  • ½ tsp cinnamon
  • 350 g gelling sugar 2:1
  • 1 pack of citric acid
  • 1 packet of vanilla sugar
  • 2 drops of vanilla oil, if available

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 15 minutes; Total time approx. 1 day 45 minutes

quick and tasty use of leftover fruit

Cut the apples into eighths, peel them, and cut them into small cubes. Pit the plums and dice them finely. Bring both to a simmer in a saucepan with rum, apple juice, water, and lemon juice. Add the allspice, cloves, and cinnamon and simmer with the lid on for about 10 minutes, stirring occasionally. Remove the pan from the heat, puree the fruit with a hand blender, and return it to the heat. Add the gelling sugar, citric acid, vanilla sugar, and vanilla oil and bring everything to a boil. Let the jam simmer for at least 4-5 minutes, stirring continuously. Immediately pour the jam into jars and turn them upside down to cool. This amount is enough for one large and one small jar. You can also adjust the apple to plum ratio; I used the amounts I had left over.
