Ingredients for 1 servings:

  • 100 g dark chocolate
  • 110 g raisins
  • 60 g walnut kernels
  • 40 g oat flakes, fine
  • 40 g oat flakes, wholegrain
  • 195 g flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 pinch of salt
  • ½ tsp cinnamon
  • 1 tsp. clove powder
  • 120 g banana(s), ripe
  • 172 g butter, soft
  • 100 g brown sugar
  • 80 g sugar
  • 1 packet of vanilla sugar
  • ½ bottle of vanilla flavor
  • 1 large egg(s)

Working time approx. 45 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 57 minutes

with chocolate or raisins, good use of bananas!

Preheat the oven to 190°C (top/bottom heat). Line baking sheets with baking paper or silicone mats. Finely chop the chocolate, chop the raisins into smaller pieces, and finely chop the walnuts. Mix everything with the oats in a bowl. In another bowl, combine the flour with the baking powder, baking soda, salt, cinnamon, and clove powder. Chop the bananas and mash them finely with a potato masher or a fork. In a sufficiently large bowl, cream the softened butter with the sugars and flavoring until creamy. Stir in the egg, then stir in the banana puree. Quickly stir in the flour mixture. Finally, add the oat and nut mixture and fold everything in evenly with a spatula. Using 2 teaspoons, drop the mixture onto the baking sheet. Bake on the middle rack for approximately 11-12 minutes, leave on the baking sheet for 1 minute, then let cool on a wire rack. If you don’t like raisins, simply omit them or use 200g of chocolate instead. You could also add dried cranberries instead of the raisins. Store in a tin. Makes about 4 trays.
