Ingredients for 1 servings:

  • 100 g margarine
  • 110 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 250 g flour
  • 10 g baking powder
  • 5 tbsp milk
  • ½ cup of red fruit compote (cherry)
  • powdered sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Preheat oven to 180°C. Beat the margarine with the sugar and vanilla sugar until light and fluffy. Beat in the eggs. Mix the flour with the baking powder and add gradually. If the batter is too tough, add milk until it has a soft consistency, is not lumpy, but is not completely runny either. Bake the muffins for 20-25 minutes at 180°C, remove from the oven, and let cool. Once the muffins have cooled, cut a cone out of the top and slice off the tip, leaving a lid. Purée the cherry compote and spoon it into the prepared muffins using a teaspoon. Just enough so that the lids can be easily replaced. Make a white glaze from powdered sugar and water and spread it on the muffins. Hold the lids in place so they don’t slip off! Let it dry slightly and garnish with small sprinkles of cherry compote.
