Vanilla cookies, tender and crumbly

Ingredients for 1 servings:

  • 250 g flour
  • 1 packet of vanilla pudding powder
  • 40 g cane sugar
  • 2 tsp, levelled vanilla sugar
  • 200 g butter, soft
  • 80 g sugar, very fine, or icing sugar, for rolling
  • 20 g vanilla sugar for rolling

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 47 minutes

Put the flour, sugar, vanilla sugar, and pudding powder in a bowl. Add the softened butter and knead everything into a smooth dough. This is easily done using the dough hook on a hand mixer. Shape the dough into four rolls, each about 30 cm long, and chill for about 15 minutes. Cut about 20 cookies from each roll and place them on a baking sheet lined with baking paper. Bake in an oven preheated to 170 degrees Celsius (350 degrees Fahrenheit) for 12 minutes until light golden. In the meantime, mix the caster sugar or powdered sugar with the vanilla sugar in a bowl and roll the still-hot cookies in the mixture. Cool on a wire rack. Store in a tightly sealed container. Makes about 80 cookies.
