Ingredients for 4 servings:

  • 100 g sugar
  • 100 g cornstarch
  • 2 egg yolks
  • 2 egg whites
  • 1 liter of milk
  • 2 vanilla pods

Instructions

Working time approx. 10 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 20 minutes

First, separate the eggs. Combine the sugar and cornstarch and stir into 13 tablespoons of milk. Mix in the egg yolks. Heat the remaining milk with the vanilla bean seeds. Add the scraped pods to the milk and remove them once it has boiled. Stir the cornstarch and sugar mixture into the milk and bring to a boil. Remove from the heat and pour into a large bowl. Beat the egg whites until stiff peaks form and fold into the prepared pudding. Chill. Cover the pudding with cling film to prevent a skin from forming and refrigerate overnight, ideally. Tip: Tastes delicious with fresh strawberries and homemade brittle.
