Vanilla Pudding with Red Fruit Jelly, Fresh Strawberries and Cream

Ingredients
 

  • 500 ml Red juice
  • 2 tbsp Stevia
  • 2 tbsp Lemon juice
  • 40 g Food starch
  • 500 ml Milk
  • 2 packet Vanilla powder
  • 400 ml Whipped cream
  • 2 packet Vanilla sugar
  • 2 Pc. Vanilla pods
  • 30 Pc. Mint leaves
  • 1 kg Fresh strawberries
  • 500 g Berry mix
  • 6 Pc. Chocolate flakes

Instructions
 

  • Mix the fruit juice and the strawberry pulp with 5 tablespoons of sugar, the lemon juice and the cornstarch and bring to the boil while stirring and cook for 1 minute. Add the berries and chopped strawberries. Put the red fruit jelly in a shallow bowl and let it cool down. Place a dessert glass in the middle of the bowl and fill the red fruit jelly around this glass.
  • Remove 2 tbsp from the milk. Bring the rest to the boil with the remaining sugar. Mix the pudding powder and the vanilla pulp in the retained milk. Stir into the boiling milk and bring to the boil. Pour the pudding into the dessert glasses and let them cool. Beat the whipped cream with vanilla sugar until stiff. Decorate the pudding with small chocolate flakes. Garnish with a strawberry and a little whipped cream alternately on the red fruit jelly. Garnish the icing with the mint leaves.
