Red Fruit Jelly with Vanilla Ice Cream and Pieces of Franzbrötchen

Ingredients
 

  • 300 g Raspberries
  • 300 g Cherries
  • 300 g Strawberries
  • 300 g Currants
  • 2 cl Orange liqueur
  • 2 tsp Sugar
  • 1 tbsp Butter
  • 0,5 Pc. Orange
  • 1 Pc. Egg
  • 400 ml Cream
  • 1 Pc. Vanilla pod
  • 100 g Sugar
  • 1 Pc. French bun

Instructions
 

  • Caramelize 2 tablespoons of sugar in a pan and add the butter, deglaze with the juice of half an orange and 2 cl of orange liqueur, add half of the berries and let simmer for 8 minutes. Just before serving, add the rest of the berries for another 2 minutes.
  • For the vanilla ice cream, beat 1 egg in a water bath with 100 g sugar until frothy. Then let the mixture cool down, add the cream and pulp of a vanilla pod and stir. Put in the ice cream maker for 30 minutes. Cut the Franzbrötchen into coarse / fine pieces and add to the vanilla ice cream and process in the ice cream machine for another 8 minutes.
