Vanilla pudding without pudding powder

Ingredients for 5 servings:

  • 1 liter of milk, 1.5%
  • 60 g sugar
  • 1 packet of vanilla sugar
  • 60 g cornstarch
  • 1 vanilla pod(s), pulp
  • 2 egg yolks
  • 1 pinch of salt

Measure out 100 ml of the milk, bring the remaining 900 ml milk to a boil with the vanilla pod and the scraped vanilla seeds. In the meantime, beat the egg yolks with a pinch of salt in a mixing bowl until light yellow (approx. 3-4 minutes). Stir the sugar, vanilla sugar, cornstarch and the 100 ml milk into the egg yolk mixture. As soon as the milk boils, remove the vanilla pod and whisk the egg yolk mixture into the boiling milk. Bring back to the boil briefly, stirring constantly, otherwise the mixture will clump. Pour the pudding into small molds or a large bowl and enjoy warm or let it cool. Tip: If you prefer a fluffier pudding, you can beat the two egg whites that are left over from separating the eggs until stiff peaks and stir them into the cooled pudding.
