Vanilla Tropical Dessert

Ingredients for 2 servings:

  • 1 pack of vanilla pudding powder, vegan
  • 300 ml rice milk (rice drink)
  • 3 packets of vanilla sugar
  • 35 ml coconut milk
  • 1 cup of yogurt (rice yogurt, natural)
  • Fruits, fresh, according to taste and season

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 45 minutes

Heat the rice milk and coconut milk in a saucepan, stirring constantly. Be careful, it will burn easily. Add the vanilla sugar and then whisk in the custard powder. Bring to a boil briefly and remove from the heat. Let cool for about 8 minutes, then carefully fold in the rice flour. Ladle the cream into glasses or dessert bowls and chill for at least half an hour. Garnish with fresh fruit before serving.
