Vegan and gluten-free chocolate cookies

Chocolate cookies are a classic. For a vegan and gluten-free recipe, you need 100 grams of pitted dates, 50 grams of almond butter, 130 grams of rice flour, 170 milliliters of water, 50 grams of buckwheat flour, 1 tablespoon of ground psyllium husks, 3 tablespoons of cocoa and 1/2 teaspoon of baking powder.

  1. Preheat the oven to 170°C top and bottom heat.
  2. For the dough, first, chop the dates into small pieces. Then put them in a bowl with the water.
  3. Pour in the almond butter and mix everything with a hand blender until it forms a creamy mass.
  4. In a second bowl, mix the remaining ingredients together and then add the date mixture. Mix everything together until you get a smooth dough.
  5. Using a rolling pin, roll out the dough between parchment paper so that the dough is about 1 cm thick. Cut out the biscuits with round cookie cutters and place them on a baking tray lined with baking paper.
  6. Finally, the cookies need to go in the oven for about 13 to 15 minutes. Afterward, you can decorate them with vegan chocolate icing and nuts of your choice.

Coconut macaroons for vegans

For these delicious cookies, you will need 200 grams of grated coconut, 1 banana, 2 tablespoons of maple syrup, 3 teaspoons of coconut oil, 100 grams of dark chocolate, and 1/4 teaspoon of vanilla extract.

  1. Preheat your oven to 180°C top and bottom heat.
  2. Put the coconut oil in a saucepan and let it melt in it.
  3. Add the banana, shredded coconut, maple syrup, and vanilla extract. Blend the ingredients.
  4. Scoop out some of the mixtures with two teaspoons and place small heaps on the baking tray lined with baking paper. Then shape the macaroons. Repeat the process until the coconut mass is used up.
  5. Put the cookies in the oven for about 20 minutes. Then let them cool down well.
  6. Melt the dark chocolate in the microwave or in a water bath. Then decorate the macaroons.
