Vegan Apple, Oat, and Walnut Muffins

Ingredients for 1 servings:

  • 200 g wheat flour type 405
  • 100 g oat flakes, fine
  • 100 g walnuts
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 1 packet of baking powder
  • 2 tsp cinnamon
  • 1 pinch of salt
  • 150 ml soy milk (soy drink)
  • 150 g soy yogurt (yogurt alternative)
  • 3 tbsp oil, neutral in taste, e.g. sunflower oil
  • 2 large apples
  • possibly powdered sugar

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

First, preheat the oven to 180 degrees Celsius. Chop the walnuts thoroughly. Then, in a mixing bowl, combine the flour, oats, walnuts, sugar, vanilla sugar, baking powder, cinnamon, and salt. Peel and core the apples, and cut them into small pieces. Add the apple pieces, soy milk, soy yogurt, and oil to the other ingredients and whisk well. Finally, grease the muffin tin (preferably with melted soy margarine), pour in the batter, and bake the muffins at 180 degrees Celsius for about 25 minutes. Dust the finished muffins with powdered sugar, if desired.
