Vegan apple pie or fruit pie

Ingredients for 1 servings:

  • 250 g margarine, vegan (Alsan), room temperature
  • 170 g sugar
  • 200 g wheat flour or spelt flour
  • 180 g hazelnuts or almonds, ground
  • 1 tsp cinnamon powder
  • 1 tsp vanilla sugar
  • 1 pinch of baking powder
  • 1 pinch of salt
  • 50 g almond flakes
  • 1 tbsp, leveled cornstarch
  • 500 g apples or other fruit (e.g. cherries, plums, rhubarb, …)
  • 2 tbsp brown sugar
  • Fat for the mold
  • possibly breadcrumbs, vegan for the form
  • possibly powdered sugar for dusting

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

super fast, without much effort

Thoroughly grease a 16cm springform pan. If necessary, sprinkle with breadcrumbs to make it easier to remove the cake from the pan. Mix the flour with the baking powder and place in a mixing bowl. Add the softened margarine, ground hazelnuts, sugar, cinnamon, and a pinch of salt and knead with a hand mixer until a crumbly dough forms. Quickly knead the fine crumbs with your hands into coarse crumbs. Pour 3/4 of the crumbs into the greased springform pan and spread evenly over the bottom and sides, pressing down firmly. Sprinkle the almonds onto the dough and sift the cornstarch over it. Peel the apples, quarter them, core them, and slice them thinly. Sprinkle the apple pieces with the brown sugar and stir briefly. Spread the sugared apples on the cake base. Spread the remaining crumbs evenly over the apples. Now bake the cake in an oven preheated to approximately 180°C (top/bottom heat) for approximately 50 minutes. After baking, let it cool and then remove it from the springform pan. If desired, dust the cake with powdered sugar after it has cooled.
