Banana bread without sugar

Ingredients for 4 servings:

  • 2 bananas, ripe
  • 50 g puffed amaranth
  • 150 g whole wheat flour
  • 2 tsp baking powder
  • 50 g oat flakes, fine
  • 70 g raisins
  • 50 g walnuts
  • 80 ml rapeseed oil
  • 100 ml oat milk (oat drink)
  • Fat for the mold
  • semolina for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Chop the walnuts. Combine the dry ingredients with the raisins and walnuts in a bowl and mix together. Mash the bananas and mix with cooking oil and oat milk. Mix everything until a smooth dough forms. Grease a baking pan and sprinkle with semolina. Pour the dough into the baking pan. Preheat the oven to 160°C (convection oven). Bake the banana bread for 50 minutes (test with a wooden skewer). Cool the bread on a wire rack before slicing.
