Vegan banana bread with chocolate and nuts

Ingredients for 1 servings:

  • 80 g margarine, vegan
  • 85 g raw cane sugar
  • 2 packets of vanilla sugar
  • 400 g spelt flour (wholemeal)
  • 3 bananas, the darker the better
  • 2 tsp baking powder
  • 80 g mixed nuts, chopped (macadamia, Brazil nuts and pecans)
  • 100 g chocolate, dark, chopped
  • 200 ml milk (oat milk)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Melt the fat and mix with the sugar. Mash the bananas. Mix the flour with the baking powder. Quickly mix the wet and dry ingredients with a wooden spoon. Pour the batter into a loaf pan lined with baking paper and bake in a preheated oven at 150°C (top/bottom heat) for about 60 minutes. Test with a skewer if it’s cooked through. Remove from the pan and let cool on a wire rack. It tastes best lukewarm, but it also makes a wonderful breakfast bread cold.
