Vegan Banana Cookies with Spelled Flakes

The perfect vegan banana cookies with spelled flakes recipe with a picture and simple step-by-step instructions.

  • 2 piece Bananas, ripe
  • 400 ml Spelled milk – could also be soy milk
  • 100 g Raw cane sugar
  • 150 g Spelled flakes
  • 200 g Einkorn flour
  • 1 tsp Baking soda and baking powder
  • 0,5 Cup Dried cranberries
  • 0,5 Cup Chopped hazelnuts
  • 1 tbsp Dark balsamic vinegar
  • Salt, turmeric
  1. Preheat the oven to 180 degrees top / bottom heat. Mash the bananas in a bowl, mix with the spelled milk, sugar, balsamic vinegar, salt and turmeric.
  2. Mix the spelled flakes with the flour, baking powder and baking soda. Pull under the banana mixture. At the end, add cranberries and hazelnuts, mix with a wooden spoon.
  3. Using a spoon (I use scoops that look like ice cream scoops from the USA), place piles of the same size with enough space on a baking sheet with baking paper. I bake in 2 stages so that they become even. Bake in the oven for about 15 minutes until they are light brown, allow to cool.
  4. You can use any vegetable milk you like, of course also other flour or other sugar. But I like the nutty taste of einkorn flour.
