Vegan Banana Cookies with Spelled Flakes

Ingredients
 

  • 2 piece Bananas, ripe
  • 400 ml Spelled milk - could also be soy milk
  • 100 g Raw cane sugar
  • 150 g Spelled flakes
  • 200 g Einkorn flour
  • 1 tsp Baking soda and baking powder
  • 0,5 Cup Dried cranberries
  • 0,5 Cup Chopped hazelnuts
  • 1 tbsp Dark balsamic vinegar
  • Salt, turmeric

Instructions
 

  • Preheat the oven to 180 degrees top / bottom heat. Mash the bananas in a bowl, mix with the spelled milk, sugar, balsamic vinegar, salt and turmeric.
  • Mix the spelled flakes with the flour, baking powder and baking soda. Pull under the banana mixture. At the end, add cranberries and hazelnuts, mix with a wooden spoon.
  • Using a spoon (I use scoops that look like ice cream scoops from the USA), place piles of the same size with enough space on a baking sheet with baking paper. I bake in 2 stages so that they become even. Bake in the oven for about 15 minutes until they are light brown, allow to cool.
  • You can use any vegetable milk you like, of course also other flour or other sugar. But I like the nutty taste of einkorn flour.
