Vegan banana cookies

Ingredients for 1 servings:

  • 210 g flour
  • 100 g sugar
  • 1 large banana(s)
  • 1 packet of vanilla sugar
  • ½ tsp baking powder
  • 1 pinch of salt
  • 2 tbsp baking cocoa
  • 80 g margarine

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Melt the margarine, but don’t let it get too hot. Meanwhile, mash the banana as thoroughly as possible and mix it with a hand mixer along with the sugar and the remaining ingredients, except for the flour. Once the margarine is liquid, you can add it, then add the flour. Then let the dough cool in the refrigerator for 20 minutes. Preheat the oven to 170°C (top/bottom heat). Form the dough into balls about 4 cm in size. Rinse your hands with very cold water beforehand. Place the balls on a baking sheet lined with baking paper, leaving about 2-3 cm of space between the cookies. Place the cookies in the oven for about 15 minutes. The baking time may vary depending on the size of the balls and the power of the oven. As a variation, you can also chop chocolate into 3-4 mm pieces and stir them into the batter. The combination of banana and chocolate is delicious. Please note that chocolate is not vegan unless you buy special vegan chocolate. You can also use butter instead of margarine, but then the cookies are no longer vegan.
