Vegan banana pancakes

Ingredients for 6 servings:

  • 300 g flour
  • 400 ml soy milk (soy drink) or oat milk, sweetened
  • 1 tsp baking powder
  • 2 bananas
  • 2 pinches of salt
  • possibly walnuts

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Stir together flour, sugar, baking powder, salt, and soy milk. Slice the bananas and fold in. Chop or coarsely crumble walnuts to taste and fold in (a little more or less soy milk if desired; the batter should be a little firmer). Pour a ladleful of batter into a hot pan and fry until golden brown on both sides (do not press down!). Serve with maple syrup or agave syrup.
