Ingredients for 1 servings:

  • 115 g vegetable margarine, room temperature
  • 225 g brown sugar
  • 1 tbsp soy flour
  • 2 tbsp water
  • ½ tsp lemon zest
  • 80 g soy milk (soy drink), room temperature
  • 1 tsp vanilla powder, or the pulp of a vanilla pod
  • 300 g flour
  • 150 g blueberries

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Mix the sugar with the margarine. In a separate bowl, combine the soy flour with the water and then add it to the sugar mixture. Mix well. Add the lemon zest, soy milk, and flour and knead everything into a tough dough. Wash the blueberries, dry them slightly, and carefully fold them into the batter. Line a baking sheet with parchment paper and spread tablespoon-sized amounts of batter onto it. Bake the cookies at 190°C for about 20 minutes, until they are lightly browned around the edges and on the bottom.
