Vegan: Cabbage Soup with Pearl Barley

Ingredients
 

  • 3 medium sized Diced potatoes
  • 3 medium-sized Diced carrots
  • 1 small Diced parsnips
  • 400 g White cabbage cut
  • 2 liter Vegetable broth
  • 2 tbsp Caraway seeds
  • 3 handful Barley barley
  • 3 handful Grind fresh pepper

Instructions
 

  • Peel, wash and cut or dice the vegetables, put everything in a saucepan. Fill up with vegetable stock and add the caraway seeds whole or painted - if you don't like them, leave them out completely - and bring everything to a boil.
  • The whole thing should cook for about 15 to 20 minutes, then add the pearl barley and let everything simmer for another 10 minutes ... so the pearl barley is cooked through.
  • Transfer everything together into a bowl and serve ..... add some freshly ground pepper and caraway seeds and then ... Bon appetit.
