Vegan: Cabbage Soup with Pearl Barley
The perfect vegan: cabbage soup with pearl barley recipe with a picture and simple step-by-step instructions.
- 3 medium sized Diced potatoes
- 3 medium-sized Diced carrots
- 1 small Diced parsnips
- 400 g White cabbage cut
- 2 liter Vegetable broth
- 2 tbsp Caraway seeds
- 3 handful Barley barley
- 3 handful Grind fresh pepper
- Peel, wash and cut or dice the vegetables, put everything in a saucepan. Fill up with vegetable stock and add the caraway seeds whole or painted – if you don’t like them, leave them out completely – and bring everything to a boil.
- The whole thing should cook for about 15 to 20 minutes, then add the pearl barley and let everything simmer for another 10 minutes … so the pearl barley is cooked through.
- Transfer everything together into a bowl and serve ….. add some freshly ground pepper and caraway seeds and then … Bon appetit.
