Vegan cashew dressing

Ingredients for 1 servings:

  • 200 ml oil
  • 180 ml vinegar
  • 500 ml water
  • 200 g cashew nuts
  • 3 tbsp mustard, medium hot
  • 3 tbsp agave syrup
  • 2 tsp salt
  • n. B. garlic
  • n. B. herbs, fresh

Working time approx. 10 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 10 minutes

Soak the cashews in lukewarm water for about 1-2 hours, then drain and rinse. Blend all ingredients, except the oil and herbs, in a blender until smooth. Season to taste (garlic, for example, works well), then blend in the oil. Finally, if you like, mix in finely chopped fresh herbs. This goes well with all salads, including pasta salads, potato salad, coleslaw, etc.
