Vegan chocolate muffins

Ingredients for 1 servings:

  • 250 g flour
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • 80 g applesauce
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 80 ml vegetable oil
  • 250 g oat milk (oat drink)
  • 2 tbsp cocoa powder, unsweetened
  • 100 g dark chocolate, coarsely chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

for 12 muffins

Preheat the oven to 180°C (top/bottom heat). In a bowl, combine applesauce, sugar, vanilla sugar, oil, and oat milk. In another bowl, combine the flour, baking powder, baking soda, cocoa, and chocolate, then add to the wet ingredients. Stir until well blended. Divide the batter between the paper-lined muffin cups and bake for 20-25 minutes. Let rest for 5 minutes, then remove and let cool. Makes 12 muffins.
